Let It Snow, Let It Snow, Etc. Etc.

Easy and Delicious Pumpkin-Chip Bundt Cake
Today was the last day of January. Is it too late to wish you a Happy New Year? Probably. But I will anyway. Here it is almost the middle of winter but as far as my blog is concerned, you might as well call it the dead of winter. No, my blog is not dead. But like much of the plant and animal kingdoms, it has been in a dormant state lately. You might even say... hibernating.

Where, Oh Where, Has My Little Blog Gone?
Unlike bears and daffodils however, it's not going to wait until spring to wake up. So that's good news, right? Do I really need to explain my absence? Probably not. But on the off-chance that it matters… well… where do I start? It's really not all that interesting, come to think of it. Let's just say, "life happened", and leave it at that. I was deeply involved in living the life I've been blessed with, spending real time face-to-face with my family and friends, and observing and enjoying the wondrous and wintery world around me. O.k. I also had a major case of the blues. Or maybe it was the mean reds. That's all part of this wonderful life sometimes too.

Quoting... John Greenleaf Whittier

"Ah! on Thanksgiving day, when from East and from West,
From North and from South, come the pilgrim and guest,
When the gray-haired New Englander sees round his board
The old broken links of affection restored,
When the care-wearied man seeks his mother once more,
And the worn matron smiles where the girl smiled before.
What moistens the lip and what brightens the eye?
What calls back the past, like the rich pumpkin pie?"

- John Greenleaf Whittier (from the poem, The Pumpkin, 1846)

Jack-Be-Useful

Get the most use from an ordinary pumpkin
What can you do with a jack-o-lantern that never fulfilled its Halloween destiny? That was what I pondered earlier this week. We bought two rather large orange beauties but then got too busy to carve them in time for Halloween. In the past, I would've just called them autumnal decor and enjoyed them as-is until they started to get squishy. Now I'm thinking what a silly wasteful girl I was. There is so much goodness in these orange orbs... it's almost spooky.

Most folks use sugar pumpkins for their pie-baking etc. Truth be told, I prefer them also. They're smaller and easier to work with as well as being naturally sweeter than their carve-able cousins. They also cost more. The cheapest I found was a buck a pound. Might as well buy the canned purée. But... there is a trick to using jack-o-lantern pumpkins (which are a much better deal) which you'll see in a minute. First things first...

Pumpkin: it's not just for pies

Pumpkin: It's not just for pies!
Sometimes I forget to think about pumpkins very much beyond the Thanksgiving weekend. But pumpkin is a winter squash after all, and the last time I checked... it's still winter. We are, in fact, right in the thick of it.

Did you stock up on canned puree before the holidays? I'll bet there's a can or two in your pantry right now. Maybe you roasted and pureed your own this year... like me, you may have a little left in the back of the freezer.* Go make some homey and hearty pumpkin-rich muffins, quick breads or biscuits... they'll make winter worthwhile. Besides, once Spring rolls around, you won't even give pumpkin another thought... why not use it up and enjoy it now?
*Don't have any? Used it all up? None at the store? Try substituting a different winter squash or even roasted and mashed sweet potatoes for the pumpkin puree.

Pumpkin Spice-tacular

October has flown by at a wicked pace. Here we are at the end and I've only cracked open one can of pumpkin purée so far. There was some talk of a shortage of the slimy orange stuff this year. But then there was talk last year of a shortage too. Whether an actual deficiency exists or not, when people are afraid that they won't be able to get something, they buy lots of it, stocking up so they won't be without. I've personally not seen any evidence of a shortage, but I still bought two big cans of it when one small can would have sufficed. Hey, it's not like I won't use it or anything, right?

Of course, if the pumpkin in the cans is simply a melange of winter squash, then... I may just make my own stash of frozen purée using these directions from The Kitchn. It will of course depend upon the price difference between winter squashes and the canned pumpkin. But in the meantime I bought the big cans of pumpkin anyway. What did I do with them? Take a peek....

Pumpkin Chip Cookies

Pumpkin Chip Cookies
A drizzly gray November day means only one thing: perfect baking weather! I had wanted to make these cookies last week, but assumed that the recipe called for butter, which we were out of. How surprised was I to discover that there's no butter in these cookies? While I do love a crisp buttery cookie, it's nice to know that there are options out there. You know, for those times when your inner-cookie monster comes out and starts getting all demanding on you. These are soft, cakey cookies that are super easy to make and should appease most monsters. They would be a great addition to a Hallowe'en party dessert spread. And while it's a little late for that this year, it is still pumpkin season, so no excuses.

October = Pumpkins

With each change of season I think to myself, "This is the season I love best!". If I were forced to pick a favorite though, it would be autumn, hands down. There are no extremes in the autumn. The days are warm, dry and clear, and the evenings are cool. You can wear your favorite suede shoes all you want. You no longer need to try and keep the house cool, but it's not quite time to worry about heating it either. Hot drinks start to replace iced ones, and you don't mind a bit.

October in particular is synonymous with so many wonderful things: bringing sweaters out of storage, the leaves turning colors, noticeably shorter days, Hallowe'en candy, and the gorgeous golden light coming from the sun.

But best of all, it's time to start adding the earthy flavors of fall into our cooking. Starting with pumpkin. Here are a bunch of pumpkin recipes and ideas to get us all in the mood...
