Triple Berry Bars


The weather and the calendar are almost in sync. It stopped raining and the sun sort of came out for most of the weekend. Just in time for a big backyard BBQ yesterday. This dessert is the ideal thing to bring to any kind of potluck: it's easy to make, easy to transport, feeds a crowd, and... oh yeah, it's yummy. I do so love an unfussy scrumptious dessert...

Berry Cobbler Pie Bars from Joy The Baker

My Notes: Doubled the recipe to make 2 pans of bars. (approximately 24 bars per pan). Used the 64 oz. bag of frozen berries from CostCo. Thawed them overnight in their bag, drained them really well the next morning. Doubling the recipe was a bit of a pain, and baking the two pans of bars at the same time was no picnic either. Definitely don't double it! The recipe says to rub the lemon zest into the sugar with a spoon or bench scraper before adding it, but I was in a hurry so I put them in the mixer bowl and let the machine do the work for me while I got the other ingredients measured. It worked like an absolute charm. In the summer, make crust in the morning or late at night, when it's cool in the kitchen, so the butter doesn't warm up too fast. And speaking of butter, I may try to use less butter next time I make this...

  2. Heather: You recognized it huh? Caught! Yep, we were in such a hurry, I didn't have time to snap a photo before we left our house! I think it's absolutely perfect with the berry bars...
